2.  Sample wine (but not "lees" from near the bottom of the barrel - Brettanomyces settles).

·         Sample size: 10 -1000 mL (samples will not be returned)

·         500mL - 750mL:   sensitivity cutoff for will be 10 CFU*/mL  (*=colony forming units of Brettanomyces bruxellensis)

3.  Package

• Minimize head-space by filling your well-sealed container; protect glass containers to avoid breakage.
• Mark each container with a waterproof (sharpie) pen on a tape label

4.  Ship samples either on ice or at room temperature

·      Ship on ice to minimize growth stimulation (due to aeration and temperature increase)

·      < 30 mL sample will be tested without concentration (i.e. filtration); sensitivity = 10,000 cells/mL
